Fairmont Singapore has opened Mikuni, its new Japanese restaurant. Formerly known as Inagiku, the restaurant has undergone a major transformation in terms of both interior design and menu style.
Led by Korean-born Executive Chef, Moon Kyung Soo, the restaurant will include signature dishes such as a mushroom broth with seafood served in a siphon filter, as well Wagyu Tataki (shaved Wagyu beef, ponzu, shimeji mushroom and truffle tofu cream), and Kawaki Mono (sun-dried puffer fish, sweet mirin flavour and dried sardine paper.
New interior features include a live robatayaki station, which involves using a wooden paddle to barbecue food and pass it around to guests, a sushi counter (pictured above) and a teppanyaki counter. Mikuni will also feature a sak
